Serves 2, takes about 25 min to prepare:
20-25+ cherry tomatoes, Flavor Bombs are awesome!
3 balls of burrata
3 cloves fresh garlic, peeled
5-6 basil leaves
Sea salt to taste
Black pepper to taste
Olive oil
2 fresh or packaged Naan, med size
2 tbsp pesto
2 tbsp sundried tomato pesto
Parmesan to taste
Directions:
In a skillet over medium heat add the olive oil and garlic. Let simmer. Slice the tomatoes in ½ and add to the skillet along with the fresh basil, lower heat and let simmer til soft and browned lightly.
Lightly oil the Naan and throw in an oven or toaster oven on broil for a few min, be sure to watch it as it darkens quickly!! You want just a little ‘burn’ and warm them a bit.
While this is going on, mix the 2 pesto together and set aside.
When the tomatoes are cooked, just mix lightly and crush up the garlic a bit. Add salt and pepper to taste.
Remove the naan and spread the pesto on each one. You’ll fold these in half to make the ‘sandwich’ so spread the pesto in the center or on 1 half, whichever you prefer. Add the tomato mix, top with the burratta…ripping 1 in ½, so put 1 and a half on each fold over. And spread it over the tomato mixture evenly.
Dust on some parmesan and fold over….ENJOY!!
Mix it up: Add some seared Beyond or Impossible meatballs or a seasoned Beyond chicken tender for extra protein!
